Fruity Breakfast Waffle Nachos
I think that if we start making all our food in either nacho, taco, or pizza form everything will immediately taste better. If you think about it, pizza already comes in all combinations. And have you ever had a pizza you don’t like? I didn’t think so. Or tacos, put something into a tortilla shell so you can eat it with your hands and it already tastes more amazing. Nachos have the same effect. I can’t say I would ever turn down nachos. So I used the concept for Breakfast Waffle Nachos, and it did not disappoint. I went with sweet and savory for this recipe, but you could go for a heartier combination and put eggs, chorizo, vegetables, beans, or avocado.
In this recipe I kept it easy and used frozen waffles, but if you have more time you can make homemade waffles. It was easy to pull together for snacking during brunch. The presentation and colors make it look like you spent a lot of time being creative.
Fruity Breakfast Waffle Nachos Recipe
Serves 2-3.
Ingredients
- 4-6 frozen waffles (or make from scratch)
- 1 cup fresh berries such as raspberries, strawberries, blueberries or blackberries
- 1/2 of a mango, cut into cubes
- 1 banana, peeled and sliced
- 1/4 cup peanut butter, creamy or chunky (or substitute almond or cashew butter)
- 2 oz dark chocolate, melted
- Honey
Directions
- Preheat the oven to 350.
- Wash the berries. If using strawberries, cut off the top and slice the fruit.
- Peel and slice the banana.
- Cut the mango in half around the inside pit. Take each half and run a knife in both directions to create cubes (don’t slice the knife all the way through the skin). Invert the mango half to separate the mango squares. Using a knife cut the mango away from the skin. Cut the large pieces into small bite size pieces if needed.
- In a small bowl, heat 1/4 cup of water in the microwave for about 30 seconds. Add 1/4 cup of peanut butter and whisk until smooth. Add more warm water or peanut butter until you reach a consistency that is easy to drizzle.
- Put the chocolate in a small bowl and heat it in the microwave for 20 second increments, stirring each time until melted and smooth.
- Place waffles in a single layer on a baking sheet and heat in the oven for 2-3 minutes on each side until warm and slightly crisp. Remove them from the oven and cut each waffle into quarters.
- On a serving platter or plate, add the waffles bites and top with fruit. Then drizzle with the peanut butter, chocolate, and honey.
- Serve immediately.
The portion size is easy to adjust depending if you are cooking for a crowd or not. Adjust the type of fruit depending on what you have on hand and what is in season. Try fresh peaches, apples, or pears or top with a caramel sauce, whipped cream, or ice cream. Make them for breakfast or as a fun dessert.
