Italian Meatball Sandwich
There are many busy days that we have to rely on what is in the freezer or stocked away in the cupboard for dinner. The days of frozen dinners, canned soup or boxed macaroni and cheese. Fast, easy and let’s be honest, not necessarily bad tasting. I can’t say I’ve ever been mad about eating frozen pizza for dinner. But, we can still have a jacked, satisfying meal that uses what is lodged in the depths of the freezer.
These meatball sandwiches use frozen meatballs and jarred tomato sauce instead of fresh. The rolls can be stored in the refrigerator, the green peppers can be frozen (or you can skip them) so all you need to have from the fresh is the cheese. If you want a really jacked frozen meal the meatballs and tomato sauce can be your own homemade recipe just stored in the freezer. But, if you do that you are making everyone else look lazy and stealing the thunder away from my Jacked Kitchen pantry meal sandwich post!
These sandwiches are great for a dinner or lunch or can be made in a large batch for a party. It’s World Series time here in Chicago and the Cubs are working on making history. I’ve been stress cooking my way through many of the games or flooding through the grounds to join in the celebration. These sliders proved to be a great addition to our World Series party food grazing. We approach game 4 tonight with many fans on the edge of their seats. Go Cubs Go!
Italian Meatball Sandwich Recipe
Makes 2 sandwiches.
Ingredients
- 2 mini ciabatta rolls
- 4 frozen meatballs
- 3/4 cup tomato pasta sauce
- 2 slices fresh mozzarella
- 1/4 of a green bell pepper, sliced
Directions
- Defrost the meatballs for 30 seconds in the microwave so you can cut them in half
- Heat a small skillet over medium heat. Add a drizzle of olive oil and add the sliced green pepper. Saute for 2-3 minutes.
- To the saucepan, add 3/4 cup tomato sauce and the meatballs. Cook until the sauce and meatballs are warm, 4-5 minutes.
- Slice the ciabatta rolls in half. Add the sauce, meatballs, and bell pepper. Top with the cheese.
- Wrap the sandwich in foil and warm in a toast oven or place the sandwich in microwave for 20-30 seconds to melt the cheese.
I use mini ciabatta rolls that are available in the bakery section of the grocery store. The smaller size, similar to the size of slider instead of a full sandwich fits 2 meatballs per roll. You may also find larger rolls which fit all 4 meatballs on one sandwich.
