Soft Shell, Hard Shell Double Decker Tacos
Double decker tacos should just be assumed when you make tacos. Nobody wants to pick between hard shell and soft shell when they can have both. Double decker tacos only need a few extra steps to make. Prepare the same meat and toppings you normally make for tacos and use a can of refried beans (or make your own) to use as the glue between the hard shell and the soft shell.
If you are cooking for a crowd, make up a handful of tacos and keep them in the oven until its time to eat. The tacos are crunchy and cheesy and make for the perfect, quick weeknight meal.
Hard Shell, Soft Shell Tacos Recipe
Makes about 4-5 tacos.
Ingredients
- 1/2 pound ground turkey or beef
- 1 packet of taco seasoning
- 1/4 cup taco sauce
- 1 can refried beans
- 1 cup iceberg lettuce, chopped
- 1/4 cup cheddar cheese (or more to your liking)
- 1/4 cup salsa (either store bought or homemade)
- Handful of cilantro leaves
- 1/4 cup sour cream
- 4-5 small hard shell corn tortillas
- 4-5 small soft flour tortillas
Directions
- Brown the ground meat in a skillet. Follow seasoning packet instructions. (Usually the packets are for 1 pound of meat so you may need to use half of the packet.)
- Add a 1/4 cup of taco sauce to the meat. Stir to combine and keep over low heat.
- In a small saucepan, heat the can of refried beans. Stir often until warm.
- Chop the iceberg lettuce into small pieces/strips.
- Slice the jalapeno into thin slices.
- Shred the cheddar cheese.
- Remove the cilantro leaves from stems and roughly chop.
- Heat the taco shells (both hard and soft) in the microwave until warm (about 30 seconds).
- Build the tacos by spreading a thin layer of the refried beans over the soft shell, spreading all the way to the edge.
- Add a layer of meat into the hard shell taco; add cheese, lettuce, salsa, jalapeno, and sour cream.
- Put the hard shell taco into the middle of the soft shell and fold into one taco.
If the size of the shells don’t match, before building the tacos, cut the flour tortilla to the appropriate size.
