Baked Chicken and Peaches
Fresh peaches and lemon give this baked chicken a sweet, tangy flavor, and the marinade makes it juicy and tender. I add a bit of Chinese Five Spice for a little extra flavor. It’s easy to pull together if you are in a hurry. Serve with a side of vegetables or rice and you have a healthy, fast weeknight meal.
Baked Chicken and Peaches Recipe
Serves 2.
Ingredients
- 1/2 Tbsp balsamic vinegar
- 1/2 Tbsp white vinegar
- 1 shallot, minced
- 2 Tbsp brown sugar
- 1/4 tsp Chinese Five Spice (substitute 1/8 tsp ginger and 1/8 tsp cloves)
- 1 Tbsp lemon juice
- 1 lemon, sliced
- 2 peaches, sliced into eighths
- 2 chicken breasts
Directions
- In a small bowl, whisk together 1/2 Tbsp balsamic vinegar, 1/2 Tbsp white vinegar, 1 minced shallot, 2 Tbsp brown sugar, 1 Tbsp lemon juice and 1/4 tsp Chinese five spice. (If you don’t have Chinese Five Spice substitute 1/8 tsp ginger and 1/8 tsp cloves)
- Slice 2 peaches in half and remove the pits. Slice the peaches into eighths (keep the skin on the peach slices).
- Slice the lemon.
- Place 2 chicken breasts in a Ziploc bag or between two pieces of plastic wrap and pound the chicken until it’s thin and an even thickness.
- Pour the marinade into a medium size baking dish. Add the chicken, peaches and lemon slices, and turn to coat them in the marinade. (Make sure the chicken is flat on the bottom of the pan without fruit underneath it.)
- Let the chicken and fruit marinade while you preheat the oven to 350.
- Bake the chicken for 15 minutes and flip the breasts. Continue cooking for another 10-13 minutes for a total of 25-28 minutes or until the chicken is thoroughly cooked.
- Remove the casserole dish from the oven. Place the chicken breasts on a plate and discard the lemon slices.
- Pour the marinade and peach slices into a small saucepan. Whisk in 1 tsp of cornstarch. Cook the sauce until it starts to bubble and thicken, about 3-4 minutes.
- Pour the sauce and peaches over the chicken.
- Serve with a side of steamed vegetables.
In this recipe I used two chicken breasts, but you can double the recipe if you need to serve more than two servings. I served the chicken with a side of steamed broccoli. The chicken and peaches would taste great with a variety of vegetables – pick what you like best.
