Baked Tilapia
Tilapia is an easy fish to cook because it has a mild taste and is great at absorbing flavors. It works well for baking, grilling or pan frying. Sprinkle the fish with a bit of seasoning and a dab of butter, and it cooks in a matter of minutes.
In this recipe I season the fish with a mild spice such as paprika and a squeeze of pungent lemon. Before placing the pan in the oven, I curl up the edges of the foil to capture all of the juices and flavors. It’s easy to get hooked on this fast cooking, flavorful recipe.
Baked Tilapia Recipe
Serves 2.
Ingredients
- 2 tilapia fillets
- 12-14 springs of asparagus
- 2 lemons, sliced
- 4 small or medium sized tomatoes, quartered
- 1 Tbsp olive oil
- Kosher salt
- Black pepper
- 1/4 tsp paprika
- 1/2 Tbsp butter
- Fresh herbs – thyme, rosemary or oregano (You can skip them if you don’t have fresh herbs.)
Directions
- Preheat the oven to 400,
- Line a baking sheet with foil and curl up the edges.
- Place 2 tilapia fillets, asparagus and tomato quarters onto the pan. Drizzle olive oil and a sprinkle of kosher salt and black pepper across the pan.
- Sprinkle the fish with paprika.
- Place a dab of butter and a squeeze of lemon juice on the asparagus and each of the fillets. Lay the rest of the lemon slices across the pan.
- If using fresh herbs, lay the springs on top of the fish.
- Bake for 14-16 minutes until the fish is fully cooked and flaky. Serve with the extra juices.
Substitute any white fish in place of the tilapia. Swap the asparagus or tomatoes for other vegetables such as Brussel sprouts, carrots, onions, squash, green beans, etc.
