Chocolate and Peanut Butter Fruit Toasts
Sometimes I go through phases when I have to ban peanut butter from my house. It’s a rough intervention for a while, but I know things are bad when I’m spooning globs of delicious peanut butter directly into my mouth. And its not just peanut butter, I don’t discriminate against almond butter, cashew butter…they all get the boot because I have no self control.
But when I’m not living under a self-imposed peanut butter ban, delicious things happen like these Peanut Butter Chocolate Toasts. 1) Toast….crunchy, warm bread…yes. 2) Fruit….fresh and sweet….yes. 3) Chocolate…. its chocolate, need I say more….yes. 4) Peanut butter…..nutty and creamy…yes. 5) You basically don’t need a recipe….yes. It’s like the perfect snack or breakfast. Unless you have no peanut butter. Than its just a sad, sad day.
Chocolate and Peanut Butter Fruit Toasts Recipe
Makes
Ingredients
- Artisan bread, sliced (French, country, sourdough, etc)
- 1 banana, sliced
- 2-3 strawberries, sliced
- Handful of blueberries (about 1/4 cup)
- 1 tsp chai seeds
- 1 tsp pumpkin seeds
- 1-2 Tbsp peanut, almond or cashew butter
- 1-2 Tbsp fudgy chocolate spread (recipe below or use store bought fudge sauce)
- Drizzle of honey (optional)
Fudgy Chocolate Spread
- 2 ounces dark chocolate, chopped (or chocolate chips)
- 1 Tbsp unsweetened cocoa powder
- 2 Tbsp brown sugar
- 2 and 1/2 Tbsp milk (2% or whole)
- 1/8 teaspoon salt
- 1 tablespoon unsalted butter
Directions
Fruit Toasts
- Cut the bread into thick slices and spray it with cooking spray or brush with oil.
- Toast the bread in a toaster oven, toaster, or in a skillet until toasted (just starting to turn brown).
- Prepare fruit.
- Wash and thinly slice strawberries.
- Wash blueberries.
- Peel and thinly slice banana.
- Spread toasts with either chocolate or peanut butter.
- Top with fruit.
- Sprinkle with pumpkin and chia seeds.
- Drizzle with honey (optional)
Fudgy Chocolate Spread
- Chop 2 ounces of dark chocolate bar into large chunks (or use chocolate chips).
- Add the chocolate, 1 Tbsp cocoa, 2 Tbsp brown sugar, 2 and 1/2 Tbsp milk and 1/8 tsp salt to a small sauce pan.
- Place over medium heat until the chocolate melts. Use a whisk or fork to combine the ingredients as they warm.
- When the chocolate starts to bubble, cook for 2-3 minutes and then remove from the heat.
- Add the butter and continue to stir.
- Let the chocolate cool.
