Seared Salmon Sandwich
Cooking for 1 person can take some getting use to. Many recipes are written for 4 or more people. That means you either have to eat the same thing for days or end up wasting a lot of food. Just because you may not have to feed more than yourself doesn’t mean you have to eat frozen meals all the time. This sandwich is the perfect example of a meal for one that still tastes great. And is a little Jacked.
You can choose the portion size of fish you want while at the grocery store or cut a fillet in half to make two separate pieces. Grab 1 tomato and 1 ciabatta roll from the grocery store bakery. Use what you want of the lettuce and avocado and save the extra for a salad.
I toast the ciabatta roll so it’s a bit crunchy. The seasoning on the salmon will form a crust on the outside while it stays tender on the inside. Creamy avocado, crunchy lettuce and ripe tomato make for a fresh, flavorful sandwich.
Seared Salmon Sandwich Recipe
Makes 1 sandwich.
Ingredients
- 1 ciabatta roll
- 3-ounces salmon
- 1/8 tsp seasoning (use your favorite seasoning or sprinkle with paprika, cumin, black pepper and salt)
- 2 lettuce leaves
- 1 small tomato, sliced
- 1/4 avocado, sliced
- 1/2 Tbsp mayonnaise
- Kosher salt
- Black pepper
- Olive oil
Directions
- Heat a drizzle of olive oil in a small skillet over medium heat.
- Cut the ciabatta roll in half and place the inside of the bread face down in the pan. Toast for 2-3 minutes until golden brown. Remove the bread and set aside.
- Drizzle the salmon with olive oil and season with 1/8 tsp of seasoning.
- Increase the heat to medium-high. Add the salmon, skin side up and cook for 4 minutes. Turn the fish and cook on the second side for another 3-4 minutes until the salmon feels firm.
- Build the sandwich by spreading mayonnaise on the top half of the bread. To the bottom of the roll layer the lettuce, sliced tomato, salmon and avocado.
I like to sear my salmon for about 3 minutes per side and finish cooking it in foil in the toaster oven. If you don’t have a toaster oven, it’s not worth heating the entire oven. You can cook it only in the skillet.
Fish and cheese don’t often make for a good combo, but I found a very sharp cheddar that I included in this sandwich. It added a nice bite.
