Herby Soft Scrambled Eggs
I was never the biggest fan of scrambled eggs until I learned how to make a soft scramble. I grew up thinking that eggs should be cooked with milk over high heat, but they always ended up tasting spongy and had a funny smell. Slow cooking scrambled eggs over low heat makes them thick and creamy. Unlike a fast-scramble over medium heat these eggs are silky and soft.
There are varying recipes for making scrambled eggs some of which include adding milk to the eggs prior to scrambling. Adding milk seems like it would make them creamier, but instead it makes them runnier. Skip the milk and slow cook the eggs to keep them creamy and soft.
Serve the eggs scrambled with herbs or add to a breakfast sandwich or breakfast burrito.
Herby Soft Scrambled Eggs Recipe
Makes 1 serving.
Ingredients
- 3 eggs, lightly beaten
- 1/4 Tbsp butter
- Kosher salt
- Black pepper
- Fresh chives, chopped
- Fresh parsley, chopped
- Fresh dill, chopped
Directions
- Crack the eggs into a small bowl and use a fork to stir. (Don’t add air to the eggs by using a circular whisking action. You don’t want air bubbles in the eggs.)
- Heat a small skillet on the lowest heat setting.
- Add a small dollop of butter to the pan. Once melted, use a spatula to spread the butter and add the eggs. (You do not want a hot, sizzling pan; make sure to keep the heat on low.)
- Use a spatula to constantly stir the eggs, folding them over each other while they slow cook for 5-6 minutes.
- Remove the eggs from the heat when they are glossy and appear just slightly “wet”.
- Sprinkle with a pinch of kosher salt, black pepper and top with chopped parsley, chives and dill.
If you don’t have fresh herbs on hand or don’t want to buy a bundle of herbs just for this recipe, you can skip the them all together or stir in dried herbs just before the eggs are fully cooked. If you want a little heat, add a pinch of dried red pepper flakes. Stir in grated Parmesan cheese just before the eggs finish for an added punch of flavor.
This recipe is written for 3 eggs which works for one person. Increase the number of eggs to feed more people if needed. Follow the instructions to cook over low heat and increase the amount of cooking time until the eggs are fully cooked.
